Coffee Beans to Grams Without a Scale: A Field Guide for the Mornings Your Scale Dies
Coffee math is brutal at gram precision. Here's how the no-scale methods (tablespoon, fill level, bean count) actually compare — and when to give up and brew by feel.
Specialty coffee runs on grams. The standard ratio is 1:15 to 1:18 coffee-to-water, meaning 18g of beans to 270-324g of water for a single 9oz cup. The 2g difference between “too weak” and “just right” is real and tasteable.
Then your scale dies on a Tuesday morning and you have ten minutes to make coffee before a meeting. Or you’re at a friend’s place. Or you’re camping with a Hario V60 and didn’t bring the scale.
This is the field guide for those mornings. The methods are imperfect because coffee is unforgiving, but some are much better than others.
Why coffee is harder than other no-scale food
Most foods tolerate ±10% measurement error without anyone noticing. Coffee doesn’t. The flavor extraction curve is sharp around the right ratio:
- 1:13 (too strong): bitter, acrid, over-extracted bite
- 1:15 (strong but balanced): bold, ideal for darker roasts
- 1:17 (medium-light recommended): clean, sweet, balanced
- 1:18+ (too weak): thin, sour, under-extracted
A 10% error on the dose (16g instead of the intended 18g) shifts you from 1:17 to 1:19. Noticeable. A 20% error makes the cup unpleasant.
This is why “scoop it and hope” works for some people — usually those who drink darker roasts where slight variation hides in roast intensity. For light-roast specialty coffee, you need better than ±10%.
Method 1: The tablespoon estimate
One level US tablespoon of whole coffee beans weighs roughly 5-8 grams, varying by:
- Roast level. Light roast beans are denser and weigh more per spoon (~7-8g). Dark roast beans expand and weigh less (~5-6g).
- Bean variety. Larger beans (Pacamara, Maragogipe) pack less efficiently into a spoon than smaller beans (Bourbon, Caturra).
- Whole vs ground. Ground coffee weighs less per spoon than whole beans because it packs differently. A tablespoon of medium grind is roughly 4-6g, vs 5-8g for whole beans.
Practical conversion:
- 18g target = ~3 tablespoons whole beans (medium roast)
- 22g target = ~3.5 tablespoons
- 30g (large pour-over) = ~4-5 tablespoons
Accuracy: ±15-25%. Better than nothing, worse than ideal.
The rule: count the spoons consistently from the same coffee bag, and adjust your dose count once you’ve tasted a few cups. If 3 spoons makes too-strong coffee from your current bag, do 2.5 next time.
Method 2: The bag fill level
If you buy single-origin in 12oz (340g) bags and you brew 18g per cup, each bag contains exactly 18.9 cups of coffee. Track usage by fill level:
- Full bag: 19 cups remaining
- 3/4 fill: 14 cups remaining
- 1/2 fill: 9 cups remaining
- 1/4 fill: 5 cups remaining
So the 1/4 fill in the bag means roughly 85g remaining (340g × 0.25), which is 4-5 doses at 18g.
Accuracy: ±20% (depends on how visually accurate your fill estimate is).
Useful for ration-checking the bag, less useful for individual brews.
Method 3: The bean count
This is the underrated method. Coffee beans of similar variety and roast have surprisingly consistent individual weights.
Reference weights per bean:
- Light-roast medium-size bean (Bourbon, Caturra): ~0.13g
- Medium-roast medium-size bean: ~0.12g
- Dark-roast medium-size bean: ~0.10g
- Large-bean varieties (Pacamara): ~0.20-0.25g
So 18g of medium-roast medium-size beans = ~150 beans. 22g = ~180 beans.
Counting 150 beans takes a minute, but you can build muscle memory quickly: count them out a few times against your scale when it’s working, and you’ll learn what 150 beans looks like in a small pile.
Accuracy: ±5-8% if you count and your beans are consistent. Surprisingly good.
Method 4: The shot glass / measuring container
A standard 1.5 oz (44 mL) shot glass holds approximately:
- ~25g of whole medium-roast beans
- ~30g of light-roast beans
- ~20g of dark-roast beans
A 2 oz cordial glass holds ~33g of medium-roast beans.
A small glass jar (like a 4 oz jelly jar) holds ~70g of medium-roast beans when filled to the top.
Mark your favorite container with a fine line corresponding to your ideal dose. Once calibrated against a scale that worked, the container becomes a custom-calibrated measure.
Accuracy: ±5% after calibration.
This is what most no-scale coffee enthusiasts end up using. A calibrated container becomes muscle memory.
Method 5: The phone camera estimate
Photograph your beans piled on a plain plate or in a small bowl. Phone camera apps that handle bulk granular materials (Kitchen mode in Scale for Grams) estimate the volume and apply coffee bean density.
Accuracy: ±10-15% in good light on a plain surface.
Good when you don’t have a calibrated container handy. Useful for the camping/traveling case. Less useful for daily brewing where you’d prefer the bean count or container method.

The honest recommendation: if you’re a daily specialty coffee drinker, buy a coffee scale ($25-40 on Amazon). The Acaia Pearl is the gold standard but a $25 generic 0.1g scale gets you 95% of the way there.
For the mornings the scale dies, the calibrated-container method beats everything else. Mark a small jar at your dose level once. Use it forever.
Brewing by ratio when you can’t weigh water either
If you can’t weigh anything — beans or water — use volume:
- Standard mug: ~12 oz (355 mL) of water
- 1:17 ratio = ~21 g of coffee for that mug
- Approximately 3.5 tablespoons of beans (medium roast)
For a standard 8-cup pourover/Chemex (40 oz / 1.18 L):
- 1:17 ratio = ~70g coffee
- ~10-12 tablespoons of beans
These are starting points. Adjust to taste.
A note on grind size
This article focuses on dose, but grind size matters at least as much as dose for extraction. A scale-perfect 18g over-ground in a blade grinder will taste worse than an eyeballed 16g properly ground in a burr grinder.
If you don’t own a burr grinder and you’re weighing your dose precisely, you’re optimizing the wrong variable. Buy the burr grinder first, the scale second.
When to just buy the scale
Buy a coffee scale if any of these are true:
- You drink specialty coffee daily.
- You brew pour-over, AeroPress, or French press where dose precision matters.
- You ever want to taste differences between origins or roasters cleanly.
- You’re getting into espresso, where 0.1g matters.
